The last of the 2009 series and possibly the most adventurous. Tonight’s wines are supplied by Berkman Wine Cellars, who have also provided the services of two of their wine specialist staff: Bob Morely and Adrian Hunter, who will guide us through the evening’s progression of wines. South America is home to a rich diversity of cultural and culinary influences and boasts a growing reputation for wine production. What better place to end the 2009 gourmet season?
To Start
Spinach Savoury (Espinafre Saboroso)
Although spinach was first domesticated in Central Asia, this Venezuelan dish demonstrates the universal appeal of this leafy green – rich in antioxidants, full of nutrients, and a delicious starter for tonight’s dinner. This dish is made from spinach, lemon juice, nutmeg, cream and grated Parmesan, garnished with crispy bacon and hard boiled egg.
Wine pairing: Malbec Barrel Select, Bodega Norton, Argentina
Argentine Malbecs have recently grown increasingly popular on the international wine scene. This bright, floral selection bears traces of dark plum, licorice, pastis and black tea.
Fish Course
Marinated Sea Bass
Variants of this recipe are popular along the Pacific coast of South America, where sea bass (also known as Patagonian Tooth fish, or “merluza negra” in Chile) is a major export. We have chosen an Ecuadorian version served on lettuce with sliced onion and sweet potato.
Wine pairing: Runamock Rose Chile.
Chile has developed a growing reputation as a source of quality, value-priced wines during the past 20 years, and is now the world’s fifth largest exporter of wine. The Chilean climate is uniquely suited to wine production, with rain in the spring, dry weather at harvest, and plenty of sunshine.

Lemon Pork with a Carrot, Orange and Walnut Salad and Sliced Baked Potatoes
Peru is home to a wide variety of cuisines and cultural influences. With its vivid combination of flavours and textures, this colorful salad exemplifies the diversity of Peru.
