Food and Wine Pairings

To Start

Artichoke and Olive Crostini              
Toasted Italian bread brushed with olive oil, topped with a finely chopped spread of olives and artichokes, this Italian antipasto (appetizer) delivers a flavourful, savory start to your dining experience.

Wine pairing: Terre del Noce Pinot Grigio, Vigneti delle Dolomiti
The Terre del Noce Pinot Grigio is an elegant, dry wine with aromas of apple and banana and a clean, crisp finish.

Fish Course

Linguine alla Calamari
Narrow like spaghetti, flat like fettuccine, linguine noodles are known as “little tongues” in Italian. While most home cooks are familiar with linguine accompanied by meat and tomato sauce, Italy has a long tradition of serving this pasta with seafood – in this case, baby squid (“calamari”). The linguine noodles entwined with the petite squid create a pleasing combination of textures and a clean, fresh flavour.

Wine pairing: Castel Firmian Lagrein Rosato, Mezzacorona, Trentino
The Lagrein Rosato is a fresh, fragrant, wine with a rosè color, dry flavour, and a fruity and delicate bouquet.

Meat Course

Saltimbocca
Saltimbocca in Italian means “jumps in the mouth.” We prepare our interpretation of this classic Italian dish with pork tenderloin wrapped with prosciutto and topped with sage.

Wine pairing: Angelo Nero d’Avola/Sangiovese, Sicilia IGT
A dark, brooding wine packed with flavour that explodes in the mouth. A real wine making tour de force.

Sweet Course

Torta di Pere
Complete your Italian culinary tour with the Torta di Pere – a cake made from bittersweet chocolate and pears. Fruit and chocolate have never been combined to a more delightful effect.  
Wine pairing: Vinsanto del Chianti Classico Tenute Marchese Antinori (Sweet)
Traditionally served as a dessert wine, this selection bears generous, complex aromas with hints of honey and dried fruit, and offers a well-structured, pleasantly sweet and lingering flavour.
