France is held in high regard as the country that invented modern gourmet cooking. Tonight, we will enjoy an inventive French gourmet menu prepared by Chef Creswick, accompanied by some excellent French wines supplied by Mathew Clark.

Amuse Bouche

French for “mouth amuser,” amuse bouche are a type of intensely-flavoured, creatively arranged bite-size appetizer, specially selected and prepared for you by our top chef and accompanied by a glass of sparkling Blanc de Blanc.

To Start

French Onion Soup
Humble and ancient in its origins, French Onion Soup has become one of the classic staples of modern French cuisine. With a foundation of beef broth and caramelized onions, topped with a crouton and Gruyere cheese, this simple soup contains a multitude of flavours, with a comforting and warming effect.

Wine pairing: Provencal red
The region of Provence in southeast France has been home to wine-making for over 2,600 years, dating back to the ancient Greeks. The spicy, full-flavoured Provencal reds have recently attracted increasing praise from wine critics and connoisseurs.

Fish Dish

Marinated Salmon Makis with Basil and Wasabi
Franco-Japanese fusion food? Rolls of Scottish salmon stuffed with sea fish - a fresh, invigorating experience for the taste buds.

Wine pairing: Macon rose
The Rhône river valley of southern France is one of the world’s most renowned wine-producing regions and Jadot is one of its best winemakers. This is a dry, pale pink wine.

Meat Dish

Chateaubriand Steak.
This is a recipe of a particular thick cut from the tenderloin served with a reduced sauce made from white wine and shallots moistened with demi-glace and mixed with butter, tarragon, and lemon juice.

Dessert

Chocolate Profiteroles.  
Delectable dessert made from sweet, light Choux pastry, filled with cream, topped with syrupy Valrhona chocolate sauce.

Wine pairing: A white Sauternes
Sauternes
is a French dessert wine from the Sauternais region of the Graves section in Bordeaux. Sauternes is made from Sémillon, Sauvignon Blanc, and Muscadelle grapes that have been affected by Botrytis cinerea, also known as noble rot. This causes the grapes to become partially raisined, resulting in concentrated and distinctively flavoured wines. Sauternes is one of the few wine regions where infection with noble rot is a frequent occurrence, due to its climate. Even so, production is a hit-or-miss proposition, with widely varying harvests from vintage to vintage.
